The Writers

David Julian McClements was born in the north of England but has lived in California, Ireland, France, and Massachusetts since then.  He is currently a Distinguished Professor at the Department of Food Science at the University of Massachusetts where he specializes in the areas of food design and nanotechnology. He has written numerous books, published over 1200 scientific articles, been granted several patents, and presented his work at invited talks around the world.

Lutz Grossmann is currently an Assistant Professor in the Food Science Department at the University of Massachusetts Amherst. He grew up in Baden-Württemberg (Germany) and graduated in Food Science and Engineering from the University of Hohenheim in Stuttgart. His research focuses on facilitating a sustainable food system transition by designing holistic approaches to increase the consumption of plant- and microbial protein-rich foods.

I was soooo excited to get this book in the first place since I have been looking forward to this book for a long time. The quality of the book is amazing, with the beautiful cover, and includes lots of colorful and informative figures inside. I am a postdoc researcher in the Food Science area and am doing research studies about Plant-based foods. This book will provide me with a very instructive but also informative introduction, which definitely accelerates my understanding of this area.
