I’m returning the blue one. I’m keeping “The Hashimoto’s AIP Cookbook”. It’s brilliant.

It’s perfect for anyone who is looking for radical diet modifications to figure out what is causing you pain or health issues.

This book literally lays everything out for you by explaining the importance of following this diet, the benefits to you, and then it gives you some pretty amazing recipes. It even has some awesome desserts which I’m going to try the coconut fried apples now.

It is exactly what I was taught when I took a 6-week course at the Cleveland clinic with their functional medicine department with their top doctors. That department was started by Dr. Mark Hyman.”

Joshua_24_15 “Have had Hashimoto’s for years and been GF for 8 years. Recently, after weeks of stomach issues, my ND recommended an elimination diet. Several of the things to be eliminated, I found I eat a lot of…dairy, eggs, nuts, nightshades! What can I eat?!! I realized her suggestions fell nicely with the AIP diet, so I began my google search for recipes. My search stopped when I got this book! In 2 days I’ve made 7 of the recipes already. Each one has turned out well, and several of them my children have enjoyed too!

I really like how the author is a Nutritionist with many credentials, and her husband is a chef. Great explanations on how to do the AIP diet, how to reintroduce foods, a food journal, etc.

So far I’ve made:
-slow cooker shredded chicken (my almost 3 yr old literally licked the bowl and asked for more)
-Turmeric sheet pan chicken with carrots (I ran out of carrots, so did sw. potato instead)
-AIP spice blend (super helpful. It makes the chicken awesome).
-Rainbow Chicken Salad (my older kids and hubby enjoyed this with me.)
-Green Goddess dressing (has dill in it, but my 12 yr old still liked it on the Rainbow Chicken salad)
-Apricot Date Energy bites (my kids and hubby and I really like these. Reminds us of a Lara bar, but better)
-Cinnamon Tapioca Pudding (has a yummy caramel cinnamon comforting flavor. I was so happy to see this recipe as my hubby likes to make homemade tapioca, so this recipe allows me to enjoy, too.)

I feel great when I eat these recipes so far. They are satiating and I am having less periods of “What can I eat? I’m hangry! I want chocolate.” 🙂

r&m “I have been fighting Hashimoto’s Disease for several years. Even after having thyroid removed, symptoms spike throughout the year. Quick background: I am a size 4, exercise every day, have my blood work monitored regularly for thyroid med and eat clean. However, I was following more of a keto diet. For past several years, I noticed not feeling well after eating certain foods. Recently, symptoms of Hashimoto’s have been very high. Bloodwork showed on a score of 1-4 being normal, I was almost a 9. After Googling diet for Hashimoto’s I found that anti-inflammatory foods and diary, etc needed to be eliminated and why. What was interesting was all the foods I noticed were problematic over the last year or so fell into the categories listed. This book not only has a clear explanation of what is happening and how to re-introduce foods as well to see what is problematic for you – a customized approach. What was refreshing was the recipes were actually very good. Many common ingredients. If you are keto, you can still be. I am, though, introducing grain free tortillas into my mix. I have learned that you can add more healthy carbs on this method because the calorie count is much lower than on a keto diet so it balances out perfect for me. I typically make a batch of the slaw (I make without the fruit) and have the salmon, slow cooker chicken and cod handy at all times. Having a taco for lunch every day has been really good with slaw and a protein. The Matcha Latte in the morning is really good as well. You don’t need use all the ingredients in each recipe for it to be delicious so don’t fret on buying one ingredient only needed for one recipe. There are two step results in this diet: First, I have not had any symptoms I have had after eating under this new method of elimination. I can only believe that the second phase of healing the gut which takes time is happening every day. Finally, I will take my time deciding what foods to reintroduce and what goods I really don’t need to have going forward — like dairy.”
bluejay2day “Cookbook arrived in good time and as described. It comes highly recommended by many people in the Autoimmune Protocol support groups I’m in, and I would recommend it too. Clearly set out, easy to follow. Apart from the cover and a full page photo at the beginning of each chapter there are no photos for most of the recipes; I don’t mind that but some people prefer pics so just mentioning it. For me, fewer photos means more recipes and more space for a clearer presentation, plus a slightly smaller book that’s easier to take with you if you want to. It’s not as small as the Sheet Pan AIP book (which I also like) but more recipes and naturally a wider variety of ideas because it’s not all sheet pan, though there is a sheet pan recipe in it 🙂 Easy to read and understand introductory section containing useful information. Very happy to have a thyroid specific AIP cookbook. Thank you Emily and Phil Kyle.”
