Only for diehards who want to devote their lives to food prep

I’m giving this book two stars because it was decently well-written and had nice photos. However, I found the content of the book to be pretty much useless, for two reasons. The main one is that this cookbook asks readers to make all their own base ingredients (broth, coconut milk, even cooking fat) from scratch. All the recipes then list those ingredients, which themselves require you to prepare them. This means, first of all, that many of the ingredients are not readily available in stores– you have to make them yourself– and that the prep times for the recipes are wildly inaccurate. If it takes a day to make homemade coconut cream– which one can’t find in almost any store– and ten of the recipes here require that coconut cream, then really the prep time for any one recipe is multiple days. The tips provided to obtain these niche ingredients (e.g., “Befriend a sustainable farmer and ask him/her to give you animal fat for cooking purposes”) are just laughable. Unless you’re a stay-at-home spouse who lives in someplace like Northern California, has tons of time and money, and wants to devote your whole life to preparing autoimmune-friendly food, these propositions are totally unreasonable. I’ll be looking for an autoimmune-diet cookbook that’s more in touch with everyday, middle-class American reality.

So glad I got this

This book has been a lifesaver for me. I have Hashimoto’s thyroiditis and hypothyroidism. Things were humming along just fine for 15 years after my diagnosis — no problems as long as I avoided dairy, which I usually did. Then one day (following a pizza lunch) I woke up with hives over my entire body. They were there the next day. And the next. And the day after that. I did a little research and realized I was having an autoimmune flareup. I read up on the autoimmune protocol diet and was a little overwhelmed about where to start. I don’t love cooking, so most of my meals ended up being some kind of simply prepared protein plus a salad or steamed sweet potato. That got really old after a month. (And yeah, still waking up with hives every morning.) I purchased this book with a good deal of skepticism. Cooking for the AIP diet is time consuming and, as a person who put hot sauce on everything previously, how could anything taste good without all my favorite spices? After looking through the book, I felt inspired. The photography is excellent, the recipes aren’t super complicated, and nothing requires too many expensive speciality ingredients or gadgets. I just spent a few hours in the kitchen with this book and made an enormous batch of chicken soup, sage and garlic chicken patties, a pot of collard greens and 2 jars of sauerkraut. It’s enough food to last me half the week. And after taste testing, I can confirm that everything is delicious. The sage and garlic chicken patties were especially impressive — I don’t usually use sage or coconut and it’s opened my eyes to flavors I previously overlooked. I’ve committed myself to 6 months of eating recipes from this book and I’m hoping my disease will go into remission. I’m not a big fan of cookbooks — I’ve owned and tossed more than I care to remember because they never get used. But I can already tell this book is going to get a ton of use and stay on my shelf for a long time to come.

It may be good BUT the typeset is fancy, small, faint with light colors

Okay, so I ordered this book because I have autoimmune and it was recommended by my Dr., people with autoimmune have inflammation, which often effects the eyesight. The cookbooks font is very small, and it is written in a fancy font, and uses light color as highlights.
Not even with my glasses could I read the font, super disappointing. I think if someone truly understands and is writing a cookbook for autoimmune they may want to consider this, also that over 40 reading text that is in a fancy type and light is near impossible.. ughhh did I say I am disappointed? A basic typset in black would be awesome : )

UPDATE:
So I looked at my naturopaths copy of this book and his typeset is not poorly done, it is black and not faint. I believe the quality of publishing is poor for the hard covers being sold on . Seems to be quite a few reviews about the repeat pages etc.
Perhaps buying at Barns and noble might be a better idea.
